Zuppa Toscana!

I love soup! One of my favorite things about winter, aside from the fact that it is blessedly cold outside, is that it’s a wonderful time to make delicious soups and take the chill off a cold day. My #1 favorite soup ever is Zuppa Toscana, a tasty mix of Italian sausage and kale in a lovely broth topped with cream. Fabulous any time of year, but truly perfect for autumn and winter meals! Here’s how I usually make it…

Zuppa Toscana Recipe


  • 4 to 6 Spicy Italian Sausages
  • 1-1/2 pounds small red potatoes (or 6 – 7 medium), quartered or sliced
    (Occasionally I use whole “Red Creamer” potatoes – they are about 1-1/2″ diameter and less starchy for boiling.)
  • 1/2 pound fresh Kale (use it leafy straight out of the bag or cut it smaller, if preferred)
  • 1 medium onion, diced (optional)
  • 1 tsp (or more!) crushed red pepper flakes (I like to add a little kick!)
  • 1 quart chicken stock (my favorite is Pacific’s organic low sodium broth)
  • 1 quart water
  • 1/2 cup Half & Half (or whole milk or cream)


  1. Thoroughly brown sausage in skillet.
    (Squeeze meat out of casing into skillet, cook, then press out as much grease as humanly possible. Don’t worry, there will still be plenty left to add flavor to the soup.)
  2. Saute onions in a little butter until tender or until golden brown for extra flavor.
  3. Place potatoes, onions, chicken broth, and water in pot, and cook on medium heat until potatoes are nearly done.
  4. Add sausage, kale and optional salt/pepper/crushed red pepper to taste, simmer another 10 minutes.
  5. Add Half & Half. (not creamy enough for your taste? just add more!)

I let it sit a few minutes, then serve with fresh Italian bread on the side.
